Sweet Basil Smoothie

Right now I have more basil than I know what to do with, and this sweet basil smoothie is a great way to use it. Plus it’s so refreshing!  Originally I found the recipe in this book Giada at Home, but it’s also online here.

First you will need to make the lemon zest syrup. Mix 1 cup of sugar and zest of 1 lemon with 1 cup of water over medium heat. Bring this to a boil, then simmer 5 minutes or until sugar has dissolved. Remove from heat, let it cool and strain before using it for the smoothie.

For the smoothie, you will need 1 1/4 cup plain yogurt (I used Greek), 1 cup packed basil leaves, lemon zest syrup, and 1 cup ice.  Blend all ingredients until desired consistency. Add more ice if you need to thicken it up a bit.
