Onion Rings

Fourth of July already? Didn’t school just get out for summer? It’s time to start thinking about your 4th menu…

These onion rings are a fantastic addition to any bbq. People love them! The recipe comes from Big John’s Speedway Grill cookbook, which is such a great read. Not only are the recipes delicious, but the behind-the-scenes stories from Nascar are quite enjoyable.

This recipe serves 6, and you can easily adjust it according to your needs.

You’ll need:

6 large yellow onions

5C flour

36 oz. dark beer

Oil for frying

Salt and Pepper

Mix flour and beer in large bowl, let stand at least 3 hours. Slice onions into rings, about 1/2-3/4″ thick. Pat onions dry. Pour oil several inches deep in large frying pan on high heat. Try doing this on your grill side burner. That way you don’t stink up your kitchen! Or use a deep fryer if you have one. Test your oil readiness by dropping in some batter. If it sizzles, it’s hot enough. Dip onion rings into batter and let excess drip off. Batter should be thick enough to nicely coat the rings. Cook rings until golden brown, turning once. Place on paper towel lined plated to drain. Season with salt and pepper. Serve immediately.
