I’ve been making bruschetta a lot this summer. It’s quick and easy to make. For this basic bruschetta, I chopped garlic, basil and tomatoes. Put everything in a small mixing bowl and drizzle with olive oil, sea salt and pepper. Slice up some bread and top with the tomato mixture. I also like to put some grated parmesan on top. Broil in a toaster oven (this doesn’t take long) until cheese is melted and bread begins to brown.
