Blueberry and Mascarpone Turnovers

I bookmarked this recipe last year (in this book), but didn’t make it until recently. Giada just launched her new website and these turnovers were one of the featured recipes when I first visited her site. I double checked my cookbook to see if it was the same recipe–it was!

The mascarpone mixture inside the turnovers is really good. I would easily use it for other recipes (fruit tart, frostings, etc). Frying the turnovers was a bit tricky at first, but after undercooking the first few, I got the hang of it. I refrigerated the uneaten turnovers overnight and reheated them in my toaster oven for breakfast the next morning. They were still just as delicious!
