Fried Rice

How did I not ever make this before? It’s so good, and makes for a great lunch the next day! You can use whatever vegetables you like, but I would definitely recommend always using garlic and scallions.

Ingredients:

rice, brown or white

vegetables of your choice, chopped (I used garlic, scallions, kale, squash and carrots)

oil for frying

soy sauce

Cook rice. Steam kale for 7 minutes. Heat a bit of oil in pan to saute garlic and scallions. Add other vegetables with a splash of soy sauce and cook until just tender, about 5-7 minutes. Mix the rice into the vegetables with a little more soy sauce. Pack the rice down tightly in the pan and let it fry up, then toss it around so the soy sauce coats the rice. Serve immediately while hot.

*This would also be great with chicken!*
