Key Lime Coconut Cupcakes

This weekend I had some girlfriends over for dinner and drinks. My friend brought these delicious key lime and coconut cupcakes with cream cheese frosting.  (And, she even let me keep an extra one so I could photograph it and post it here.) As you can imagine, everyone was raving over them and asking for the recipe. Find the cupcake recipe here, which is paired with a white chocolate frosting. I prefer my friends’ choice to use a more simple cream cheese frosting, recipe below.

Cream Cheese Frosting:

¼ cup butter, softened

4 oz cream cheese, softened

2 cups powdered sugar

1 tsp vanilla

Cream butter and cream cheese, then gradually add powdered sugar and vanilla. Add a few drops of water if frosting needs to be thinned. Spread over cooled cupcakes.
