Chocolate Mousse Pie

Looking for a Thanksgiving dessert? This chocolate mousse pie is probably the best chocolate pie I’ve ever made. I have many failed attempts when it comes to making chocolate pie–often they don’t set well or develop a skin on the top. I’m always trying new chocolate pie recipes. This pie is delicious and simple to make. I think I got my confidence back!

Ingredients:

2 cups milk

½ cup sugar

¼ cup cornstarch

½ tsp salt

4 egg yolks

2 tbsp brewed coffee, cooled

½ tsp vanilla

5 oz bittersweet chocolate, chopped

¾ cup whipped cream, plus extra for topping

chocolate crumb crust or graham cracker crust

Heat the milk in a saucepan–not boiling. In a separate bowl, mix the sugar, cornstarch, salt, egg yolks, coffee and vanilla. Slowly whisk some of the hot milk into the mixing bowl and combine. Then, gradually pour the bowl mixture into the remaining hot milk. Stirring constantly, bring this mixture to a boil. Once it boils, it will thicken very quickly. Remove from heat and stir the chocolate in. Let the mixture cool slightly, then fold in the whipped cream. Pour the filling into the crust, cover with plastic wrap and let it chill for at least 4 hours. Serve with more whipped cream.
