Pasta with Roasted Asparagus and Balsamic Butter

This dinner is delicious–and ready to eat in the time it takes to cook the pasta. While the pasta is cooking away, you roast the asparagus in the oven and simmer the balsamic vinegar down to a syrup. Then just toss it all together with some butter and freshly grated parmesan cheese.



1 bunch of asparagus, cut into bite size pieces

olive oil

salt and pepper

½ cup balsamic vinegar

½ tsp brown sugar

pasta of your choice

¼ cup butter

1/3 cup grated Parmesan

Set oven to 400. Place the asparagus pieces onto a baking sheet and toss with a bit of olive oil, salt and pepper. Roast them for about 10 minutes.

While the asparagus is roasting, cook the pasta.

In a small saucepan, bring the balsamic vinegar to a simmer. Let it simmer until only 3 tablespoons remain. Remove from heat and add the brown sugar.

To finish, combine the pasta, asparagus, balsamic vinegar, butter and parmesan cheese. Mix well, then serve immediately while hot.
