Chocolate Cupcakes with Peanut Butter Frosting

I love chocolate with peanut butter (also seen here). This is the first time I’ve made peanut butter frosting, and let me tell you, I couldn’t get enough of it. It’s not too sweet or overpowering. As you can see, I only put a dollop of frosting on each mini cupcake. I used a large circle tip (Ateco 808, buy it here) with Wilton disposable decorating bags. When you are filling the bag with frosting, it can get a bit messy and frustrating. I figured out to set the bag inside a tall glass to hold it, freeing up both of my hands to work with the frosting, like this:

This set-up makes filling the bag so much easier! When the bag is full, simply pull the sides of the bag up and squeeze all the frosting to the bottom–and you’re ready to start decorating.
