Don’t adjust your screen–this is yellow cauliflower. Isn’t it pretty?
Roasted cauliflower is my second favorite way to eat cauliflower, and it couldn’t be much easier. (My very favorite is this.) Simply chop it up, toss it in a bowl with salt, pepper and olive oil. Make sure the cauliflower is coated in the oil, this will help it crisp up nicely. Spread the cauliflower into a single layer on a baking sheet and bake it at 400 until golden brown, about 15 minutes. If you can, give it a quick stir about halfway through. Serve immediately, while hot.
