Buttermilk Pancakes

Last night we had breakfast for dinner. I made pancakes from scratch (very rare for me) using this recipe. They came together very fast and were an all-around hit. I don’t like a too-puffy pancake and I was happy to see that these ended up being very light and thin. This recipe makes a lot of pancakes–heat your oven to 200° to keep your finished pancakes warm while you cook the rest.
