Coconut Orange Pineapple Sorbet

The recipe for this sorbet couldn’t be easier. It’s equal parts of orange juice, pineapple juice and coconut milk. I used 1½ cups of each, but you could use more or less depending on the size of your ice cream maker.

I will admit that this is not one of my favorite ice creams. It is light and refreshing, but I don’t love it.

However, I DO love it as a base for my morning smoothies. I have been using the sorbet instead of yogurt–the coconut milk makes it very creamy.

This is my new favorite smoothie!

Smoothie recipe: 2-3 scoops of sorbet, 1 C orange juice, frozen blueberries and 1 banana
