Truffle Butter Pasta

The first time I had pasta with truffle butter was at a friends’ house for dinner. It was such a simple yet impressive meal. For me, it’s one of those meals that I haven’t stopped thinking about since. The recipe came from an Ina Garten cookbook (she’s the best, right?) but it’s also online here.

Truffle butter can sometimes be hard to find–but I have had luck finding it at Whole Foods (it’s usually in the case with the fancy cheese). I’ve been told that if you don’t have truffle butter, you can make it yourself with unsalted butter and truffle oil or truffle salt.

Stir the truffle butter into hot pasta, add some cream (or reserved pasta water) and top with fresh chives and shaved parmesan
