Foil Baked Sea Bass with Vegetables

I don’t eat a lot of sea bass (I prefer salmon) but after making this I will definitely seek it out more. There are lots of variations for this dinner as well–change out the fish or vegetables and the possibilities are endless.

Here’s what I did:


sea bass (or other fish of your choice)

olive oil

½ lemon, juiced

salt and pepper

frozen corn

1 tomato, diced

black beans, drained and rinsed

cilantro, chopped for topping

Tin foil (heavy duty weight if you have it)

Preheat oven to 425°. Spread out a large piece of tin foil and place the vegetables in the middle. Put the fish on top of the vegetables and lightly brush on some olive oil, lemon juice and sprinkle with salt and pepper. Fold up the sides of the tin foil and seal tightly. Bake for about 15-20 minutes–vegetables will be bubbly and fish will be cooked through. Top with fresh cilantro before serving.
