Spinach Balls

These spinach balls are a family favorite–probably because they taste more like chips than a dreaded vegetable.  Spinach is mixed with parmesan and stuffing mix and then baked into a crispy ball. You can’t go wrong with these! I recommend making a double batch and freezing half.

Makes 12-14 using a full-size scoop, or up to 50 bite-size balls


2 (10oz) packs of frozen chopped spinach, thawed, drained and dried

4 eggs

½ cup parmesan, grated

1 large onion, finely chopped

2 cups seasoned stuffing mix

10 tbsp butter, melted

½ tsp garlic powder

½ tsp dried thyme

¼ tsp black pepper

1 tsp salt

Preheat oven to 350°.  Combine all ingredients in a large bowl and mix well. Form into balls (your choice of size) using your hands or a cookie scoop. Bake on a lightly greased cookie sheet for about 30 minutes, or until crispy and light brown.
