Crock Pot Sloppy Joes

I’m on a mission to make at least one crock pot dinner a week, and Sloppy Joes are one of my favorite things to make using one. I do brown the meat in a skillet before adding it to the crock pot, but that’s not necessary. If you don’t have a crock pot, you can easily make this stove-top and let everything simmer for as long as you want. The longer, the better.

This recipe comes from one of my favorite cookbooks, Big John’s Speedway Grill: Racing Tales & Sizzling Recipes From the Nascar Tracks. This is the one cookbook I own that I have actually read cover to cover–the Nascar behind-the-scenes stories are really fun to read.

Ingredients: (serves about 8)

1 onion, diced

butter, to saute the onion

2 pounds 80% lean ground beef (or turkey would work as well)

1 8-oz jar chili sauce

3 tbsp ketchup

3 tbsp yellow mustard

3 tbsp sugar (or brown sugar for extra sweetness)

3 tbsp white vinegar

salt & pepper

If you have time, saute the onion and ground meat in a skillet until onions are tender and meat is brown. Put the onion and meat into your crock pot with remaining ingredients. Cook on low for 4-5 hours.

Or,

If you’re in a rush, dump all ingredients into the crock pot and cook on low for 4-5 hours.
