Pumpkin Banana Chocolate Chip Muffins

Yesterday was a beautiful and much cooler day, so I put my oven to work. I was planning on making regular pumpkin muffins, but I had 3  extremely ripe bananas which got tossed in the batter along with some chocolate chips. Even though I don’t usually like anything banana–I am loving these muffins!


½ can of 15oz pumpkin

3 overripe bananas

½ cup chocolate chips

2 eggs

1½ cups flour

1¼ cup sugar

¼ cup ground flax (optional)

1 tsp baking powder

½ tsp baking soda

1 tsp pumpkin pie spice

pinch of salt

In a large bowl, combine the pumpkin, bananas, eggs and sugar. Mix until smooth, then add the baking powder, baking soda, flax (if using), pumpkin pie spice, and salt. Stir until just combined, then add the chocolate chips. Pour the batter into the cupcake liners until they are almost full. Bake for about 30 minutes, or until a toothpick comes out clean. Cool on a wire rack.
