Caramel Corn

Careful, this stuff is quite addicting. And long gone–we ate it up pretty fast. It’s super easy to make, and would be perfect to hand out to friends, neighbors or party guests this fall.

Here’s how you make it:

Ingredients: (this recipe is from my mother-in-law)

2-3 bags popped popcorn (try to find a kind that has minimal butter flavoring and be sure to pick out any unpopped kernels)

2 cups brown sugar

1 cup butter

1 tsp salt

½ cup light corn syrup

1 tsp vanilla

½ tsp baking soda

Preheat oven to 250°. Prepare a large baking sheet (you might need 2) by spraying it with cooking spray, set aside. In a large pot, boil the brown sugar, butter, salt, corn syrup and vanilla together for about 5 minutes. Stir constantly. Remove the pot from the heat and stir in the baking soda. Add popcorn into the caramel mixture a little at a time, stirring it in. When the popcorn is mixed in, spread it out on the baking sheet and bake for 1 hour. While it’s baking, give it an occasional stir. Cool, then break apart and store in an airtight container. This will stay fresh for a long time.

    Carmel corn is a great idea. Perfect to have on hand for drop ins…good recipe!!!
