Chocolate Rice Krispies Treats

The only time my kids ever have Chocolate Rice Krispies cereal is when we go on vacation. So, you can imagine their sheer delight when they came home from school one day to find these treats waiting for them. And, they’re loaded with protein and healthier than you might think. There’s no white sugar, corn syrup or marshmallows in these. I changed the original recipe slightly as it calls for brown rice syrup which I couldn’t find at my neighborhood grocery store. I used honey instead, and also added some ground flax seed as well.

Ingredients:

2/3 cup brown rice syrup (I used honey)

1/3 cup smooth peanut butter

1/3 cup smooth almond butter

¼ cup cocoa powder

3½ cups Rice Krispies cereal

*I also added a few spoonfuls of ground flaxseed and 1 scoop protein powder.

Grease an 8×8 pan and set aside. In a large pan, stir the brown rice syrup (or honey), peanut butter, almond butter and cocoa powder together over low heat. Stir for several minutes until it melts completely. Combine this mixture with the cereal and mix well. Transfer everything to the prepared 8×8 dish. Let cool before cutting.
