Eggnog Muffins

I don’t like eggnog, but to be fair, I’ve never really tried it. But, that didn’t stop me from making these muffins.

These disappeared fast. I especially liked the glaze on top.


2 cups flour

1 tsp nutmeg

1 tsp baking powder

½ tsp salt

1½ sticks butter, softened

2/3 cup sugar

2 eggs

1 tsp vanilla

1/3 cup milk

For the glaze:

1 cup powdered sugar

2 tbsp white rum

Preheat oven to 350°. Mix the flour, baking powder, nutmeg and salt together and set aside. Beat the butter and sugar until fluffy, then add the eggs and vanilla. Mix the dry ingredients and milk into the sugar mixture in alternating batches. Spoon the batter into muffin cups and bake for 20-25 minutes. Let muffins cool on a wire rack, then dip the tops into the glaze.
