Kale Smoothie

A kale smoothie? I promise this is good. I was shocked that it was. I even bribed my two boys with 3 m&m’s each if they would just taste it (I didn’t dare tell them what was in it). They actually liked it and wanted more! I couldn’t believe it. This is such an easy way to get a serving (or two) of healthy greens.

Ingredients:

½ cup coconut milk (I used unsweetened from Trader Joes)

½ cup water

2 cups kale, chopped (you could also use spinach)

1½ cups pineapple, chopped (I used fresh, but frozen would work too)

1 banana, chopped

Put everything into the blender–liquids first, then leafy greens, and chopped fruit on top. Blend for about 1 minute or until smooth.

    oh wow we had this with dinner tonight (along side turkey burgers and a salad and fresh strawberries) and it was amazing! 3 out of the 5 of us LOVED IT and had seconds!!!! thanks for the tip!

      we used almond milk instead of coconut milk, frozen banana and frozen mango, and fresh pineapple. i probably put in a little more then the kale it called for and i also added a large carrot. it was delicous!!
