Chocolate Cherry Muffins

These muffins definitely did not get the love I thought they would get. I liked them enough that I would make them again, but my kids did NOT like them. They accused me of “always hiding healthy things in our food.” Maybe next time I’ll leave out cherries.


6 tbsp butter

½ cup bittersweet chocolate, chopped

1¾ cup flour

¾ cup sugar

½ cup cocoa powder

1 tsp baking powder

½ tsp salt

¼ tsp baking soda

1 cup milk

1 egg

1 tsp vanilla

1 cup frozen cherries, thawed and chopped

Preheat oven to 350°. Melt the butter and bittersweet chocolate, then set aside. In a large bowl, mix the flour, sugar, cocoa powder, baking powder, salt and baking soda. In a separate bowl, mix the milk, egg and vanilla together. Add the wet ingredients into the dry ingredients and mix well. Stir in the melted chocolate mixture and cherries. Spoon the batter into muffin cups and bake for about 25 minutes.
