Valentine Cookie Bars

I love to make a special sweet treat to celebrate Valentine’s Day. These are sugar cookie bars with a basic frosting. I took a huge shortcut and used a cookie mix (2 packs). I wanted soft, thick cookie bars so I used an 8×8 pan and by the time they were finished baking, the cookies were popping up out of the pan–which is just what I was hoping for. Because I used a cookie mix, I made the frosting from scratch–which is always so much better than frosting out of a can.

Ingredients:

2 packs sugar cookie mix–follow instructions on package for mixing, spread batter in an 8×8 pan, then bake at 350° for about 30 minutes, or until an inserted toothpick comes out clean. Let cool completely before frosting.

For the Frosting:

2 cups confectioners’ sugar

¼ cup shortening

3 tbsp milk

½ tsp vanilla

food coloring

sprinkles, optional

Mix all ingredients together with an electric mixer until smooth. Spread over the cookie bars, top with sprinkles and cut into bars.
