Mac and Cheese Cups
Mac and cheese (from scratch) is one of my ultimate comfort foods. I made it over the weekend, using this recipe. It takes a lot of time (and dishes) to make, and my kitchen is always a disaster in the end. But, it makes a ton of food so it’s worth the work. Instead of baking one enormous pasta dish, I split it into 3 batches–one (8×8 pan) to bake immediately, one (8×8 pan) to freeze, and the remaining noodles turned into mac and cheese cups. The cups turned out perfectly and will be a nice after-school snack for my boys. These would also be a fun food to serve at a party–for both kids and adults!
*To ensure that the mac and cheese holds the muffin shape, let cool almost completely before removing from the muffin pan.
