Blueberry Banana Oatmeal Bread

My kids love to have some sort of muffin or bread for an after-school snack, so yesterday I made this blueberry banana oatmeal bread for them. I was planning to follow this recipe, but ended up changing it quite a bit. The original recipe made 2 loaves and I only wanted 1, so I halved it. I also used blueberries (instead of chocolate chips), added ground flax, orange zest and used less banana. This bread is a hit–the boys loved it with a bit of butter spread on their slices.

Here’s how I made it:

Ingredients: (makes 1 loaf or about 12 muffins)

1 cup whole wheat flour

½ cup quick oats

¼ cup sugar

¼ cup brown sugar

¼ cup ground flax

1 tsp baking powder

½ tsp baking soda

pinch of cinnamon and salt

½ cup milk

1 egg

2 tbsp butter, melted

1 cup blueberries

1 ripe banana

zest of 1 orange

Preheat oven to 350°. Grease your bread pan (or put muffin liners in pan if making muffins) and set aside. In a medium bowl, mix the milk, egg, butter and banana together. Add the rest of the ingredients (save the blueberries for the very end) and mix until combined. Add the blueberries and mix gently. Pour the batter into the pan or spoon into muffin tin. Bake the bread for about 45 minutes, or until an inserted toothpick comes out clean. Muffins will bake for about 20 minutes.
