Tomato Mascarpone Chicken

This has been added to our dinner rotation–my kids gobbled this chicken up!  You can find the exact recipe here, but it’s pretty hard to mess this up and you can just eyeball it.


chicken breasts

olive oil (for browning the chicken)

onion, chopped

garlic, minced

1 can diced tomatoes (if you’re cooking more than 3 breasts, I’d add another can of tomatoes)


fresh basil, chopped (I’m missing this ingredient in the photo)

Preheat your oven to 350°. Using an oven safe skillet, brown the chicken on both sides, then remove it from the pan and set it aside. (It will not be fully cooked–you’re going to finish it in the oven.) Using the same hot skillet, saute the onion until it’s tender, then add the garlic and cook for another minute. Add the tomatoes and bring the pan to a simmer for about 10 minutes. Add a heaping spoonful (or 2!) of mascarpone and some fresh basil, then put the chicken back into the skillet, covering it with the sauce. Bake for about 15-20 minutes, or until the chicken is done.
