Maryland Crab Dip

June 17, 2013

School is out, today is our first day of summer vacation!

We made this for lunch over the weekend and it was delicious. Crab dip is such a crowd pleaser and makes a great appetizer for guests. When I buy crab, I always get the refrigerated fresh crabmeat that you find in the seafood section. (Look for “lump” or “back fin” on the label.) I can always find it at Whole Foods or Costco. I use this fresh crab meat for dips and crab cakes. Before adding other ingredients to your crab meat, always put it in a separate bowl and pick through it with your hands and check for shells. You would be surprised how often you find a tiny shell piece, and that’s no fun to bite into.

Happy Summer!

4 oz cream cheese, room temperature

¼ cup sour cream

3 tbsp mayonnaise

fresh crab meat, 8 oz container

4 green onions, chopped

Old Bay Seasoning, to taste

¼ cup cheddar cheese

Preheat your oven to 350°. Combine all ingredients–the cheddar cheese can mixed into the dip or you can sprinkle it on top. I do a bit of both–mix some in, and save a bit for the topping. I also sprinkle a little more Old Bay right on top too. Bake for about 30 minutes, or until the cheese is melted and the dip is hot and bubbly. Serve immediately with crackers or fresh bread.

I did not like because of the sour cream you can still taste. So we doctored it up with butter and minced garlic.
