Caprese Pasta with Chicken

Today we are headed out of town for the next bunch of days, and this is the dinner I cooked last night before we left. I was trying to use up the last of our tomatoes, fresh mozzarella and chicken. I tossed it all together in hot pasta, a drizzle of olive oil, salt, pepper and fresh basil. Even though everything was mixed together in one serving bowl, it was easy for me to customize my boys’ plates by picking out the tomatoes for one and the mozzarella for the other–which makes for a very family friendly meal.
