Skillet Cookie

I usually have a stash of chocolate chip cookies in our house at all times. However, in the summer, I don’t love having my oven on all afternoon while I bake tray after tray. Making a skillet cookie is the perfect solution, because it bakes in less than 30 minutes! Skillet cookies would be a fun dessert if you’re having a party–I’d even make individual ones (I think I need a few of these) and top them with vanilla ice cream right when they come out of the oven.

Ingredients: (recipe from a children’s cookbook, Delicious Desserts)

2 eggs

½ cup sugar

1 cup brown sugar

1 cup butter, room temperature

1 tsp vanilla

1 tsp baking soda

1 tsp salt

2½ cups flour

2 cups chocolate chips

Preheat oven to 375°. Cream together the butter and sugars. Add the vanilla and eggs and mix until smooth. Add the dry ingredients and chocolate chips. Coat your skillet with cooking spray, then press the cookie dough into the pan. Bake for 20-30 minutes, until the edges are lightly browned (I like mine slightly undercooked). Remove from the oven and let cool for a few minutes before slicing.
