Pumpkin Pancakes

I’ve had the page folded down all month in Food Network Magazine with this recipe, and finally had a chance to make it yesterday when the boys had a day off from school. Usually I don’t like mixing/baking/cooking first thing in the early morning, but these came together quickly and painlessly. I didn’t tell my boys I was making pumpkin pancakes, so they had fun tasting them and guessing the “secret ingredient” (which they got right away). Immediately after their first bites they both exclaimed  that these are the BEST PANCAKES EVER!

The recipe is from Food Network Magazine, 10/13.

Ingredients: (Makes 10-12 pancakes)

1 cup milk

½ cup pumpkin

2 tbsp butter, melted and cooled; plus more for cooking

2 eggs

1½ cups flour

2 tbsp sugar

2 tsp baking powder

½-1 tsp pumpkin pie spice (I used almost the full teaspoon)

¼ tsp kosher salt

In a large bowl, whisk the milk, pumpkin, butter and eggs together. Add the rest of the ingredients and stir until smooth. Cook in a buttered pan until golden brown on both sides.
