Meatloaf Burgers
Do you ever crave meatloaf when it’s 100° outside like I do? But, it takes forever to bake and in this heat we’re having, I don’t want my oven for that long. I was happy to see this recipe for meatloaf burgers in a back issue (Aug 2011) of Food Network Magazine. What a great way to satisfy my craving–and in the form of a burger too, you can’t beat that.
Also–note the yellow watermelon. I was a bit surprised when I cut into it, but it was really good! Are these just a California fruit or are they everywhere these days?
Ingredients: (makes 4 burgers)
¼ onion, diced
1 pound ground meat (pork, beef, turkey, veal–or a combination mix)
¼ cup fresh parsley, chopped
½ cup panko (or regular breadcrumbs work as well)
1 egg, beaten
1 tsp paprika
1 tbsp + ¼ cup ketchup
1 tbsp + ¼ cup duck sauce (I didn’t have this, so I used grape jelly)
salt and pepper
buns and other toppings
Get your grill or grill pan heated and ready. In a large bowl, combine the meat, parsley, panko, egg, paprika, 1 tbsp ketchup, 1 tbsp duck sauce, salt and pepper. Give everything a good mix and then form into 4 patties. Grill for about 6 minutes on each side. Meanwhile, mix the remaining ketchup and duck sauce. Brush this sauce on the patties as you cook them. Use the leftover sauce as a spread on the burgers and buns.

Oh YUM! I made meatloaf balls before, but I never thought of sandwiching it between two buns! Great idea! Going to keep that in mind for next time 🙂
